Cheese and bread matzouna with Batzos![]() Ingredients600 gr strong flour400 gr strong brown flour 200 gr boiled potatoes (cold) 30 gr fresh yeast 15 gr salt 20 gr sugar 70 ml olive oil 7 gr rosemary 150 ml water 250 gr Batzos PreparationPlace all the ingredients - except for the Batzos and the salt - in a mixer and mix until you obtain a malleable pastry. The Batzos and the salt should be added during the last 4 minutes of kneading.Place the pastry onto cling film and let it rest for 15 minutes. Cut the pastry into 50 gr parcels. Roll these into diverse shapes, sprinkle their surface with water and then sprinkle with white sesame seeds, poppy seeds or other seeds. Place the parcels on a baking tray lined with rice paper and let them sit until they have roughly doubled in size. Bake them at 180 oC for 25-30 minutes. |
