Spring rolls with San Michali![]() IngredientsFor the pastry:500 gr all purpose flour150 ml water 50 ml olive oil 5 ml vinegar 5 gr sugar 10 gr salt For the filling:300 gr San Michali100 ml Yoghurt from sheep milk 2 eggs 60 gr butter 2 gr white pepper 30 ml olive oil PreparationMix the flour with the rest of the pastry ingredients in a bowl. Knead until you obtain a hard pastry which should be cut into 6 pieces. Roll out the pastry into thin sheets.Beat the eggs in a bowl, grate the cheese, and add the yoghurt, butter and pepper. Mix well until you obtain a hard stuffing. Grease a baking tray with olive oil. Cut the pastry sheets into strips. Place a small portion of stuffing on the pastry strips and roll them so as to get rolls which you place on the baking tray, one next to the other. Sprinkle with olive oil and bake for 30 minutes at 180 oC. |
